Artist's Statement Reshaping the Taste of Hong Kong [ Bamboo See-saw Wonton Noodles ] At sunrise, smoke rises from Gage Street as noodle masters prepare traditional bamboo-pressed wonton noodles. Chefs jump on a bamboo pole to knead the dough while others hang the noodles to dry on a bamboo tower. Eggs and flour are lifted from the market below through a vertical bamboo system, and the finished noodles are lowered to the dai pai dong on Gage Street. Visitors and nearby workers enjoy breakfast at the dai pai dong, celebrating the craft and taste of Hong Kong’s street food culture.
